Breakfast Eggs

This recipe is inspired by the classic Egg McMuffin, but it is bigger and lower in calories! I really like it for breakfast but also sometimes during the day as a snack.

Egg White Sandwich (sliced)

I use a basic toast, which is about 60 calories per slice. For the cheese, I use 25g slices which are 60 calories per slice too. You can also use shredded cheese or a different kind if you like. Just make sure it still fits your calories.

As a sauce, I like to use either ketchup or sriracha, but use what you like as long as it does not raise the calories too much.

Egg White Sandwich (45deg)

Cooking the egg whites is pretty simple in this recipe since it does not really matter if they get torn. You can just scramble them if you want to, but I try to keep them at least somewhat together, so it is easier to place on the buns.

When the egg whites have finished cooking, I like to put the cheese on top while they are still inside the pan to get it to melt a little bit more. You can turn off your stove and just let it sit inside for 1-2 more minutes.

Description:

Low calorie egg white sandwich, that is perfect for breakfast or as a snack!

Ingredients:

100g
liquid egg whites
2 slices
toast
1 slice
ham
25g
cheese (fat reduced)
1-2 leaves
lettuce
1 pinch
salt
1 pinch
pepper

Instructions:

  1. Cook Egg Whites

Cook egg whites on medium high until they are not runny anymore and then flip them. It does not really matter if they get torn, just make sure they stay somewhat together so it is easier to place on the buns later.

  2. Fold egg whites

When the egg whites are done, fold them into a small package so they fit onto your toast slices. You can turn off your stove now and put the cheese on your egg whites if you want it to melt a little bit more. Just leave it inside of the pan for 1 or 2 more minutes and it should melt pretty good.

  3. Assemble sandwich

Now you can assemble your sanwich. Put the ham on first, then the egg whites with the cheese on top. Put some sriracha or ketchup over the cheese and finally put on the lettuce. Enjoy!
